Recipe
This nutritious recipe is easy to make. Perfect source of protein for health benefits and sustained energy throughout your day. Top with your favourite fruits, yogurt, and a drizzle of maple syrup for a delightful start to your day!
Serves 10 | Prep time: 15 min, plus baking 55 min | Difficulty: Moderate
Ingredients:
- 1 sachet Healthy Trim vanilla
- 3/4 cup coconut flour
- 4 eggs (lightly beaten)
- 2 teaspoons baking powder
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1/2 cup frozen blueberries
- 1/2 cup coconut sugar
- 1 cup coconut yoghurt
- 1/2 cup coconut oil (melted in microwave)
- *2 tablespoons honey, yoghurt, fresh blueberries
Method:
1. Preheat oven to 160°C fan forced.
2. Grease a 8 x 29cm loaf tin and line with baking paper overhanging on long-edges.
3. Combine coconut oil, sugar, lemon zest, lemon juice, eggs and yoghurt in a bowl. Add flour, baking powder, Healthy Trim vanilla powder and stir to combine.
4. Gentle fold in frozen blueberries.
5. Pour mixture into the loaf tin, smooth top. Bake for 55 minutes or until skewer comes out clean. Remove from oven, allow cake to rest in tin for 5 minutes before lifting onto a wire rack to cool.
Toppings:
*Serve with yoghurt, honey and fresh blueberries.
