Recipe
Serves 14 | Prep time: 15 mins, plus chilling time | Difficulty: Easy
Ingredients:
- 1 ¾ cups almond meal
- 1 sachet Healthy Trim vanilla
- 1/3 cup desiccated coconut
- 3 tablespoons maple syrup
- Juice of 1 large lemon
- Zest of 1 lemon
- 1 vanilla pod, split and scraped
- 1/3 cup coconut oil, melted (in microwave)
- Pinch of pink salt
- *1 cup desiccated coconut, for rolling (or you can use shredded for a chunkier finish)
Method:
- Place all the ingredients (*except coconut for rolling) into a food processor and blend for 20 seconds or until mixture has started to form a large ball.
- Remove blade. Place one heaped teaspoon of the mixture into the palm of your hand and roll into balls. Toss balls in the shredded coconut.
- Repeat until you’ve used all the mixture.
- Refrigerate for about 20 minutes or until firm.
Store in a plastic container in the fridge for up to one week or freeze.
