Lemon Bliss Balls

These lemon bliss balls are the kind of snack you make on Sunday and reach for all week. Ingredients:

  • 1¾ cups almond meal
  • 1 sachet Healthy Trim Vanilla
  • 1/3 cup desiccated coconut
  • 3 tablespoons maple syrup
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 1 vanilla pod, split and scraped
  • 1/3 cup coconut oil, melted
  • Pinch of pink salt
  • 1 cup desiccated coconut for rolling (or shredded for a chunkier finish)

Method:

  1. Place all ingredients except the rolling coconut into a food processor and blend for 20 seconds, or until the mixture starts to form a large ball.
  2. Remove the blade. Take one heaped teaspoon of mixture, roll into a ball in the palm of your hand, then toss in the shredded coconut.
  3. Repeat until all the mixture is used.
  4. Refrigerate for 20 minutes or until firm.

Storage: Keep in an airtight container in the fridge for up to one week, or freeze for up to a month.

Variations

  • Chocolate lemon: Add 1 tablespoon of cacao powder to the mix for a chocolate-citrus twist.
  • Orange version: Swap lemon juice and zest for orange for a warmer, sweeter flavour.
  • Nut-free: Replace almond meal with sunflower seed meal for a nut-free alternative.
