Recipe 

This nutritious recipe is easy to make. Perfect source of protein for health benefits and sustained energy throughout your day. Top with your favourite fruits, yogurt, and a drizzle of maple syrup for a delightful start to your day! 

Serves 6 | Prep time: 20 min Difficulty: Easy

Ingredients:

  • 1/2 cup rolled oats
  • 1/3 cup oat flour
  • 1/2 cup buttermilk or milk of your choice (rice milk or coconut milk)
  • 2 eggs (lightly beaten)
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon bi-carbonated soda
  • 1 large ripe banana mashed
  • 3 tablespoons Healthy Trim vanilla

Method:

1. Combine oats, flour, milk, eggs, cinnamon, vanilla extract, bi-carb soda, vanilla powder and mix to combine.

2. Gently fold in mashed banana.

3. Heat a non–stick frying pan over a low heat, spray lightly with olive oil.

4. Pour 1/4 cup of pancake mix into the frying pan at a time.

5. Cook over low-med heat until bubbles appear and pancake holds together.

6. Carefully flip pancake and cook other side.

To Serve

Top with your favourite berries, yoghurt and a light drizzle of pure maple syrup.
